Last week addressed the idea of having guests into your home without being overwhelmed. I shared some shortcuts from Karen Burton Mains book, Open Heart Open Home and today we'll add a few more of Karen's great tips that I heartily agree with.
Do as much as possible ahead of time. If you have an orderly routine for housekeeping, it becomes easier to plan a week ahead of time, instead of trying to keep up with each day. Set aside a special time to do some extra preparation for a special event. For example, mix the frozen salad on Tuesday, prepare and refrigerate the chicken dish on Thursday evening, bake the dessert after breakfast so you can wash all the accumulated dishes at the same time. Friday's dinner has now become a breeze! Nothing is more satisfying than taking an hour to read a good book the afternoon of a dinner party-now that's organized!
Take time to collect recipes that don't require last minute preparations...souffles are out! Karen especially treasures foods which look and taste terrific, but require a minimum of kitchen time. She uses trusted old standbys frequently. Don't feel you have to always try new recipes on your guests.
If you collect recipes for great dishes that can be made ahead, kept in the freezer and fixed quickly you're all set for company any time they may pop in. Take time to make meals ahead and you'll be able to be a relaxed hostess for any occasion.
