FAST NOURISHING MORNING MEALS
Often time our busy schedules don't allow for bacon and egg breakfasts. Don't despair; you can still take time for some fast, yet nourishing, morning meals.
Most youngsters, and oldsters for that matter, love pancakes, French toast, or waffles for breakfast or just about any time of day. You may already be thinking, "Sure they do, but I don't have time to fix them in the morning." You may not have time to make them from scratch, but you could make them ahead and freeze them. Perhaps the weekend allows a bit more time to cook them up, eating some and freezing others.
Wrap them in foil, and then just pop them into the toaster on hectic weekdays. Then, for variety, try serving them with applesauce, sliced bananas or yogurt flavored with a little brown sugar instead of the usual butter and syrup.
If you'd like to have bacon with them you could also fry it up ahead, a couple of pounds of bacon until it's not quite done. Wrap the bacon in foil in individual serving sizes, so that all you have to do is simply warm them in a 350 degree oven for about 5 minutes in the morning. Pre-cooked bacon lasts a week in the refrigerator and it can also be frozen.
When summer fruits are in season, fill half a cantaloupe with cottage cheese, or make an all-American cottage cheese "sundae" with blueberries, sliced strawberries, and a dollop of plain yogurt on top. With a little planning ahead and a touch of creativity you can have a fast and delicious bite to eat before rushing out the door.
